German Apple Pancake

4 eggs
1/2 cup unbleached all-purpose flour
1/2 teaspoon baking powder
1 tablespoon sugar
1/4 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
2 tablespoons melted butter

1/4 cup unsalted butter
1/4 cup white sugar
1/2 teaspoon ground cinnamon
1 large tart apple -  sliced

In the blender, blend eggs, flour, baking powder, sugar and salt.

Gradually mix in milk, through the little whole in the lid while the blender is on its lowest setting. Add vanilla, melted butter in little dish in the microwave (about 10-30 seconds).

Let batter stand for 30 minutes or overnight. (Long wait! I know!)

Preheat oven to 425 degrees F

Melt butter in a round pie pan, brushing butter up on the sides of the pan. In a small bowl, combine 1/4 cup sugar and cinnamon. Toss your sliced apples in cinnamon sugar mixture and pour over melted butter.

Now that your batter has sat for at least 30 minutes, its time to pour it over your apple, sugar and butter!

Bake in preheated oven for 15 minutes. Reduce heat to 375 degrees F and bake for 20 minutes or until the eggs are no longer giggly.

Once it's finished call your family to the table and enjoy with homemade maple syrup!

*Remember to have help cutting apples as well as when placing and removing dish from the HOT oven!
